Forget the usual ice cream, Popsicle, or slush — take advantage of seasonal fruits with these unique recipes:Fresh strawberries and lime are blended with tequila and triple sec in our adults-only Frozen Strawberry Margarita Mousse. The alcohol serves a secondary purpose of lowering the freezing temperature of the mixture, so that it retains its unique texture. Vanilla ice cream, milk, orange juice concentrate and vanilla are blended together for a refreshing treat that the entire family will love. Try your own flavour combinations with different ice creams, sorbets, and/or frozen concentrates, like strawberry ice cream with lemonade.Our Amaretto Fruit Dip combines amaretto, sour cream, cinnamon, nutmeg and cloves for a sweet, lightly spiced dip that pairs well with berries, bananas, pineapple, and other seasonal fruit. For a kid-friendly variation, swap out the amaretto for a teaspoon of almond extract. This recipe can also be made with plain Greek yogurt instead of sour cream.Semifreddo is an Italian word that translates to “half-cold,” and it’s a way to make ice cream cake-like desserts without having an ice cream maker. While many semifreddo recipes use a custard base, our Vanilla Citrus Semifreddo gets its structure from gelatin, similar to panna cotta. Fresh lemon juice and peel add brightness to the lush and creamy vanilla base. FROZEN STRAWBERRY MARGARITA MOUSSE4 cups (1 L) halved strawberries1/4 cup (50 mL) fresh lime juice2 tbsp (25 mL) tequila2 tbsp (25 mL) triple sec or Cointreau1 tbsp (15 mL) grated lime peel1 can (300 mL) sweetened condensed milk1 1/2 cups (375 mL) whipping cream, whippedPlace strawberries, lime juice, tequila, triple sec and lime peel in a blender; puree until smooth. Add sweetened condensed milk and blend until combined. Transfer to a large bowl. Let stand for 5 minutes. Fold a quarter of whipped cream into strawberry mixture to lighten. Fold in remaining whipped cream until blended. Spoon mixture into margarita glasses or a serving bowl. Cover and freeze for at least 8 hours or up to 2 weeks. Serves 8 to 10. CREAMY ORANGE SHAKE4 cups (1 L) vanilla ice cream1 cup (250 mL) milk3/4 cup (175 mL) thawed frozen orange juice concentrate1/2 tsp (2 mL) vanillaPlace all ingredients in a blender. Puree until smooth. Pour into glasses. Serve immediately. Serves 6. AMARETTO FRUIT DIP1 cup (250 mL) sour cream1/4 cup (50 mL) amaretto liqueur1/4 cup (50 mL) icing sugar1/4 tsp (1 mL) cinnamonPinch nutmegPinch clovesCombine all ingredients until smooth. Cover and refrigerate for 2 hours. Makes 1 1/4 cups (300 mL). VANILLA CITRUS SEMIFREDDO4 cups whipping cream1/2 cup granulated sugar1/4 cup fresh lemon juice1 tbsp grated lemon peel1 tbsp vanilla1 cup cold homogenized milk2 envelopes unflavoured gelatinCombine cream, sugar, lemon juice, lemon peel and vanilla in a large non-reactive saucepan. Bring to a boil over medium heat.Reduce heat and simmer, uncovered, stirring occasionally, for 5 minutes. Remove from heat.Whisk together cold milk and gelatin in a medium heatproof bowl.Gradually stir in hot cream mixture, 1/2 cup at a time, stirring constantly until combined. Let cool for 5 minutes, stirring occasionally.Pour mixture into a greased 9×5 inch loaf pan lined with plastic wrap that overhangs by 2 inches. Cool to room temperature.Cover and freeze for at least 8 hours or up to 24 hours.To serve, remove pan from freezer. Let stand for 15 minutes.Uncover; using plastic wrap as an aid, lift semifreddo from pan and invert semifreddo onto a cutting board. Remove plastic wrap and slice semifreddo. Serve immediately.
